
R&D Assistant Manager
-Lead and support noodle-related R&D projects, including new product development, product renewal, recipe adjustment, and product transfer to mass production.
-Plan, conduct, and evaluate production trials for fried noodles, non-fried noodles and related products.
-Support line test activities, including trial preparation, process condition confirmation, sample evaluation, issue identification, and follow-up actions.
- Work closely with Production to improve line speed, production efficiency, product quality, and process stability.
- Conduct raw material evaluation and support supplier-related technical discussions, especially for flour, starch, oil, seasoning materials, and other noodle-related ingredients.
- Investigate and resolve raw material and production quality issues, such as noodle color, texture, oil absorption, dough handling, noodle cutting, steaming, frying, drying, and packaging-related problems.
- Provide technical support for packaging development, including packaging size, dimensions, design feasibility, machine suitability, and production-line compatibility.
- Support export-related product development and quality control programs, including raw material risk control for ETO, pesticide residues, chemical contaminants, and other market-specific requirements.
- Coordinate with Marketing, Production, QC, QA, Purchasing, suppliers, and overseas R&D teams to ensure smooth project execution.
- Support the R&D Director in managing team activities, project timelines, technical documentation, and cross-functional communication.
- Prepare technical reports, trial records, product evaluation summaries, and project update materials as required.
- Bachelor’s degree or higher in Food Technology, Food Science, Food Engineering, Biotechnology, Chemistry, or a related field.
- Minimum 8–12 years of experience in food R&D, product development, process development, or technical production support.
- Experience in noodles, instant noodles, rice noodles, vermicelli, pasta, flour-based products, or other cereal/starch-based products is strongly preferred.
- Practical experience in factory trials, scale-up, production transfer, and troubleshooting is required.
- Good understanding of food ingredients, formulation, process conditions, product quality, and production feasibility.
- Experience working with Production, QC, QA, Purchasing, Marketing, and suppliers.
- Ability to analyze problems logically and propose practical solutions.
- Able to work in a factory-based R&D environment.
- Good communication and coordination skills.
Able to read and prepare technical documents in English. Japanese ability is an advantage but not mandatory.
